Smoked oyster on the half-shell, salsa quemada, pickled cactus, mezcal reduction and lime juice. Finished with candied orange zest.

Salsa Quemada – Quemada literally means burnt. To create this salsa you burn some components to create an ash. Add the ash to other fresh herbs and spices. Finally, puree them all together.
After busy night of shucking that led us to sell though our oysters early… We all got to cut loose! 🙂
